Hands up who ate too much over Christmas... yep, me too! I started the new decade feeling totally bloated and unable to look a mince pie in the face. When Bill's got in touch and invited us to try its Veganuary menu it won on four counts: healthy, light, meat-free and no cooking! Ideal for those of you who want to take a more healthy approach in the lead up to 2020 wedding season.
I've been a vegetarian for about half of my life, but I've never taken the plunge into full-on veganism. For many years it was almost impossible to order a vegan meal in a restaurant, but times are changing as so many people are now embracing a plant-based diet. Bill's, which already makes vegetables the star of the show in many dishes, has now taken it to the next level with this incredible Veganuary menu.

It's not just salad; I had a hearty Carrot, Cashew Nut and Mushroom Wellington. It was wholesome, warming and the perfect comfort food for a cold January evening. My husband (who is a meat-eater) ordered the beetroot steak, and admitted that it was so good he'd probably order it again next time we go! The texture of it was incredible; you really have to try it to believe it. As a veggie, I'm used to having one option on a menu, so the amount of choice was very exciting! There was also a delicious-sounding mushroom suet pudding on offer, alongside some super-healthy-sounding bowl options packed full of vitamins and goodness.
For dessert, the Sticky Chocolate Pudding and Frozen Amaretto Parfait were absolute winners – and we couldn't believe they were vegan! How can something be so creamy with no cream? Mind blown. Everything was washed down with some yummy alcohol-free cocktails – just the tonic after a very indulgent Christmas.
